more This is by no means THE handbook on baking. This book gives some great descriptions on what you need to stock your kitchen in order to get the job done, not to mention some nice photo illustrations on things like the different stages of foamy egg whites and how to properly measure dry ingredients, but there are definately more demonstrative books out there if you're wanting to learn from the ground up. There are, however, some of the most outstanding recipes included here, each with a bright color photo to go with it. I have made numerous recipes, including the brownies, ricotta cheesecake, gingerbread, chocolate chunk cookies, white chocolate chunk cookies, and oatmeal raisin cookies. The oatmeal raisin cookies are probably the best I've ever eaten in my life. I'm nowhere near finished with getting through this book. I highly recommend.
