the ultimate italian cookbook - old favorites and interesting recipies to try. Marcella does have her opinions on how foods should be treated (for example, she says you should only occasionally use basalmic vinegar, so it is special when you do), but otherwise, using this book, you will blow your dinner companions AWAY!

I *would* recommend this for anyone who likes Italian food, but most of you have probably never had *authentic* Italian (very different from Italian-American) unless you have been to Italy. I am constantly surprised and delighted by these dishes and how WONDERFUL they taste. This book is a must for any serious cook, and one of the greatest books I have ever owned.

Having worked in rural Italy, I find these recipes and the explanations here to be truest to form, from handmaking pasta to regional differences of the same dish. Signora Hazan knows her stuff - tutti buono!
