more A good read if you harbor curiousity about the inner workings of an upscale restaraunt kitchen, as told from a writer who wanted to learn to cook like the pros and ingratiated his way into Mario Batali's world. Although it is centered on the kitchen, I liked the author's ability to absorb and observe the multitude of sub-texts going on around him. It drags a little in middle (really, how much do we need to know about short ribs), but interesting, fun, and well-written.
