A great balance of the art and science behind the making of bread. Covers every step and explains the forks in the road on how the process influences the end product. EXCELLENT.

The authoritative book on bread-baking. Whatever form or method you seek, is found in this manual. You will not find simple recipes, but a way to produce artisan bread. You will also learn some of the chemistry behind the yeast/gluten/sugar reactions. It's like a textbook dedicated to bread!

used this and nancy atherton's la brea breads books to teach myself how to make artisanal bread for small scale business. together a perfect combination of basics, chemistry, recipe creation and modification and whole grain/wild yeast breads

Great book if you'd like to try your hand at making real bread the old fashioned way. Like a lot of cookbooks though he's really anal about measuring. I can finally make a decent sour dough though I use at least double the barm he calls for.
